Asparagus. We love asparagus in this household, especially when their tip is just verging on the purplish spectre of the colour range. They're at their tenderest and most succulent. It's a shame that such a nutricious vegetable is so expensive here in Portugal, but I notice that the healthiest ingredients are usually the most expensive. Of course this could open up a debate on how Government should really impede the Supermarket chains of overpricing this type of item as much as they do, for it would save money on health for the Government, but this is not a blog for political or economical analysis, and this is after all Portugal, where Governments usually have a hidden agenda that is never the good of the nation. Moving on. Asparagus it is.
We like them best just slightly roasted on a griddle pan, with a drizzle of olive oil, sea salt and lemon. Juicy and snappy, with their crunch intact, it is really the most delicious way of cooking them. But we also revel in a warm and creamy asparagus risotto, and the ever wonderful staple that is the quiche. An asparagus quiche is paramount to heaven on the taste buds, me thinks!
