Summer luncheon


When the weather starts to warm up, there is nothing I welcome more than a good salad. It is the perfect starter for a dinner, standing in as a complement or even a substitute - depending on how warm the weather is! - for soup, and it makes the perfect lunch, seeing that my lunches are usually on the lighter side.


If I'm having it as an entrée for a meal, I go for simpler salads, just some lettuce, some not too ripe tomatoes, sweet onions thinly sliced, oregano and salt for taste, and a good olive oil and some balsamic vinegar as dressing.


But if I happen to be making a meal out of a salad, I tend to go for the whole shebang. I'm rather particular to using sweet corn, some eggs, bell peppers, carrots, radishes and watercress to improve my basic mix of lettuce, tomato and onion. Depending on what I have inside my fridge and my pantry, I might even add some asparagus, or boiled potatoes, or even beans! Salads are ripe for the imagination, they lend themselves only too well to creativity, and there's no end to what you might make of it. What's your choice of salad?
