Gateaux au gingembre


This spicy, golden cake was my husband's creation, in all its glory. He took a basic sponge cake recipe and added a few bits and pieces to come out with something that is truly unbelievable in the way it awakens your senses and your tastebuds. There's the freshness of the orange zest, with the heat of the ginger, and the sweetness and fragrant undertone of chinese spice mix... it is a one of a kind cake!


Start by turning your oven on, at 180º. Then you need to measure up 125 gr butter, 125 gr sugar - either white or muscavado - 125 gr flour and two eggs. You'll also need a knob of ginger, peeled and grated, zest of an orange, 2 teaspoons baking powder and a pinch of chinese spice mix. Cream the sugar with the butter until tthe mix is pale and then add the eggs, beating lightly. Add the flour with the sifted baking powder and mix well. Finally you need to add the chinese spice mix, the orange zest and the ginger, and mix well, as you want to make sure everything is impregnated withe these flavours. Pour the batter into a cake mold that you have buttered and floured gently, and get in the oven for 20 to 25 minutes. Check to see if it's baked at this time, by inserting a skewer in the middle part of the cake. If it comes out clean, your cake is ready. Let it cool and enjoy!
