Meatloaf night


A few years ago I used to do meatloaf at least once a week. I came across one delicious recipe of meatloaf with pistaccios and red bell peppers that was to die for, and so I did indulge on that plenty of times, as there was always enough leftovers for my husband to make sarnies out of and take as lunch on his workdays. However, the price of pistaccios has lately gone sky high, and I have been experimenting with other combos as well. This was one of them.


For this one recipe I used about 300 gr of beef and pork minced meat, a couple of slices of cheese, a leek, two garlic cloves, a red chilli and a handful of shitake dried mushrooms, which you have to soak on really hot water for at least 15 minutes. I also used black sesame seeds to add punch and texture. You start by dicing up all these ingredients - except for the beef, of course - and then stir fry the slightly in a mix of olive and sesame oil. When that is to your content, add the mince and brown it. Really allow the meat to caramelize, as it will enhance its favours. Let the mix cool and then pour it onto tinfoil paper, spreading it rather thin, then placing slices of cheese bang in the middle of it and rolling it in a sausage form. Get it on an oven dish and let it bake at 180º for 20 to 30 minutes. After making sure the meat is cooked, cut slices of it and serve with either a salad or roast veggies. 


I went for the roast veggies, as you all may know by now they are my fave!! I cut thin slices of new potatoes, wedged four tomatoes, mixed in six garlic cloves and a few black pudding slices, seasoned it all with good olive oil, herbes de provence, salt and lemon zest and baked in the oven at 200º. You will need to check at the 15 minute mark, because the cooking time will depend greatly on the type of potato you're cooking with. It's a nice warming meal, perfect for rainy days, bang in the middle of Fall, but it is also great on those mid Spring evenings when the wind is still blowing rather cold outside.
