Coffee Sponge with Butterscotch

The sponge cake is my most baked cake, I confess. It is such an easy cake to assemble, and you can even infuse it with any type of flavours you might want to. It's always a great basic recipe to have up your sleeve, one you can enhance to your liking.

This coffee sponge was quite a sweet treat, an indlugence of sorts, and not even the bitter smack of the coffee made it less sugary. So, do reserve it for a special ocasion, make it a cake you can share with plenty of people, as to sort of divide the amount of sugar between all, don't think of eating this sugar bomb by yourselves!!

For this basic sponge you will need:
  • 150 gr flour
  • 150 gr unsalted butter or magarine
  • 150 gr sugar (I usually stick to 100 gr)
  • 3 eggs
  • 1 tablespoon baking powder (yes, tablespoon, yes, really. You want it light and fluffy)
  • 1 small cup of coffee (espresso, instant, filtered, hey, you can even use coffee liquer!)
Turn on your oven at 180º and prepare a cake tin, spreading the insides with some butter, and lightly covering with flour. Or you can just get some baking paper in it. In a bowl cream the sugar and the butter together untill you have a light, creamy mixture. Add the sifted flour and baking powder, alternating with the eggs, one at a time. Mix gently, and finally add the coffee, making sure it is well blended to the batter. Pour it into the cake tin, and bake in the oven for 20m to 30m, or until you see the cake is thoroughly cooked inside and light golden on the outside. Let it cool on a rack, take it off the tin, and let it cool some more. Once it's cooled completely, cover it with the butterscotch (you can find a recipe here) and serve.     1. DE facto este bolo ficou com um aspecto muito mau coitadito, a receita de butterscotch que usei não é das melhores, faz uma espécie de caramelo tipo rebuçado e não um molho, baaaah. Mas estava super delicioso, isso garanto!!

    1. Oh, acreditas que tudo aqui me saiu MAL??? O butterscotch cristalizou, as fotos foram tiradas na cozinha com luz artificial porque era Inverno e seis da tarde, já estava de noite, bom, foi das coisas que mais me custaram fazer para o blog!!
